Beach Music Blast - Oct 1

Don't pack up your shagging shoes and Bermuda shorts just yet - Ilderton's Beach Music Blast is taking over uptown High Point at 1525 N. Main Street, at the corner of Main and Lexington Avenue!

Held onThursday evenings from 5:30 pm - 8:30 p.m, this is a family friendly event that everyone can enjoy for just $5 per person.

The final Beach Music Blast concert of this season is:

All proceeds raised will benefit the Children's Home Society, North Carolina's leading resource in adoption and foster care with the mission to promote the right of every child to a permanent, safe, and loving home.

BBQ and Bluegrass Festival - Oct 3

Get ready for some mouth-watering North Carolina BBQ and some foot-stomping bluegrass music during the 1st Annual Furnitureland Rotary BBQ & Bluegrass Fall Festival! On Saturday, October 3 from noon to 8:00 p.m., Festival Park in High Point, at Oak Hollow Lake, will come to life with the bluegrass sounds of two popular area bands:

Flatt Tyred - noon to 2:00 p.m.
John Hofmann's AcousticA - 2:30 to 4:00 p.m.
Downtown Senate - 6:00 to 8:00 p.m.

Bring your own lawn chairs, but don't bring coolers, because food and drink will be offered by 2Bills & A Grill, well known around High Point for their delicious BBQ.
Kids will enjoy an inflatable play area and many other fun activities.

Tickets can be purchased at the gate. Admission is $5.00 for 18 and older, $2.50 for 17 and younger. Parking is FREE.

Furnitureland Rotary and High Point Historical Society are sponsoring this benefit event, with proceeds going to Mobile Meals of High Point. The Mobile Meals Program delivers a nutritious noontime meal to homebound seniors age 60 and over. Volunteers from the faith community, local businesses and schools deliver the meals, which are prepared by a local caterer.

Saturday afternoon while splashing through the rain soaked booths of the Tate Street Festival I came across an awesome find. I love spices and I am always looking for better quality spices. One of the vendors at the festival was Spice3 (Spice Cubed). Great prices and selection.

Baked Custard for Two

Preheat oven to 350 degrees

1 Egg
1 Cup Milk
3 Tablespoons Sugar
3/4 Teaspoon Vanilla Extract
1/8 Teaspoon Salt
1/8 Teaspoon Ground Nutmeg

In a bowl, lightly beat the egg.  Add milk, sugar, vanilla and salt.  Pour into two ungreased 6-oz. custard cups.  Sprinkle with nutmet.  Set in a pan containing 1/2 to 1 inch of hot water.  Bake at 350 degrees for 35 minutes or until set. Cool slightly before serving.

Orange-Kissed Beets for Two

1/3 Cup Orange Juice
2 Tbsp Light Brown Sugar
1 Tbsp Butter
1/2 tsp Cornstarch
1/8 tsp Ground Ginger
1/8 tsp Salt
1/8 tsp Pepper
1 Can (8 ounces) Sliced Beets, Drained
Strips of Orange Peel

In a saucepan over medium heat, cook and stir orange juice, brown sugar, butter, cornstarch, ginger, salt and pepper until thick. Add the beets and heat through. Garnish with orange peel.

Mixed Vegetable Salad

1 Package (10 ounces) Frozen Mixed Vegetables
1 Can (15 ounces) Kidney Beans, Rinsed and Drained
1/2 Cup Chopped Celery
1/2 Cup Chopped Onion
1/2 Cup Chopped Green Pepper
3/4 Cup Sugar
1/2 Cup Vinegar
1 Tbsp Cornstarch

Cook the mixed vegetables on the stove or in the microwave until crisp-tender, drain and place in a large bowl. Add kidney beans, celery, onion and green pepper. In a saucepan over medium heat, bring sugar, vinegar and cornstarch to a boil, stirring constantly, until thickened. Cool slightly. Pour over vegetables and toss. Refrigerate. Yield: 8 servings.

Taco Bake

1 Pound Ground Beef
1 Small Onion, Chopped
3/4 Cup Water
1 Package (1-1/4 ounces) Taco Seasoning
1 Can (15 ounces) Tomato Sauce
1 Package (8 ounces) Shell Macaroni, Cooked and Drained Well
1 Can (4 ounces) Chopped Green Chilies
2 Cups (8 ounces) Shredded Cheddar Cheese, Divided

In a skillet, brown ground beef and onion over medium heat; drain.  Add the water, taco seasoning and tomato sauce; mix.  Bring to a boil; reduce heat and simmer for 20 minutes.  Stir in macaroni, chilies and 1 1/2 cups of the cheese.  Pour into a greased 1 1/2 qt. baking dish.  Sprinkle with the remaining cheese.  Bake at 350 degrees for 30 minutes or until heated through. Yield:  6 servings.

No Wheat Flat Bread

This recipe is great for those who can not eat wheat flour, however still want a little bread with a meal from time to time.  It is also a very versatile recipe.

1 Cup Sifted Corn Flour
1 Large Egg
1 3/4 Cup Milk
4 Tbsp Olive Oil
1 tsp Salt
1/2 tsp Baking Powder

Combine the dry ingredients and sift.  Combine the wet ingredients in a separate bowl and whisk until all ingredients are blended well.  Slowly combine wet and dry ingredients.  Mixture will be some what thin.

I use an ice cream scoop to measure out batter for each serving.

Heat griddle (I use setting #4 on the stove) and cook bread (will look like pancakes and can be eaten as such) until brown on each side (about two minutes each - depends on your stove and what setting you use).

I usually make up a big batch on the weekend and then refrigerated until needed.  Just turn the broiler on and heat in the oven or use a toaster.

You can also add cheese, herbs, onion or what ever you like to the cakes.
