Orange-Kissed Beets for Two

1/3 Cup Orange Juice
2 Tbsp Light Brown Sugar
1 Tbsp Butter
1/2 tsp Cornstarch
1/8 tsp Ground Ginger
1/8 tsp Salt
1/8 tsp Pepper
1 Can (8 ounces) Sliced Beets, Drained
Strips of Orange Peel

In a saucepan over medium heat, cook and stir orange juice, brown sugar, butter, cornstarch, ginger, salt and pepper until thick. Add the beets and heat through. Garnish with orange peel.

Enjoy!
